I then used the 'Copy from iPhone' tool from PhoneView (which is included in the free version) and guess what? I have my data back!!! Finally, with the "Disk" tool in the PhoneView app (which only works on Macs by the way!), I could browse to the folders "Photos > DCIM" and there were all my photos which I couldn't access via the normal methods.

I used the 'Browse disk' facility within the tool and I could see lots of system files one wouldn't normally see when plugging an iPhone into a Windows or Mac. However, just before I decided to give up, I found a tool online called PhoneView ( ) - the tool has a paid and a free version, but I only used the free one. I was already thinking that I was going to do a hard reset and start it all again, that I would have to get over losing all of those 3,000+ photos and vids that I've collected (although most would have been in an older backup I had!). Unfortunately I wasn't using iCloud for backup purposes at that point and I didn't have a recent backup done on iTunes - so the good old 'reset and restore everything from last backup' wouldn't work for me.

Changed computers (tried on Windows 10 and on a Mac). Resetting network setting and resetting all settings, turning off Mobile Data, putting on Airplane Mode when trying to import files. I tried lots of things that I found online. A subset of that would likely be my photos and videos, which my iPhone insisted in showing as '0'. If I connected my phone to iTunes, I could see a huge (20GB+) amount of 'Other'. none worked as the connection to the phone would drop or, when established, it would show as "0 photos" again. Also tried the various data recovery tools online (DrFone, PhoneRescue, AnyTrans). I also couldn't import the photos (using my MacOS X Image Capture or the Windows Image Capture tools). I couldn't back up using iTunes or iCloud. up until the point the Photos app would crash again and it would all go back to 0! Urgh! If I waited some seconds, it would start saying "Restoring." and images would start showing up, giving me hope that the photos are still there. If I opened the Photos app, the albums would all be saying '0 photos'. Even after that, I still couldn't see the data.
So I immediately deleted a bunch of apps, cache, safari history and so on to clear about 5GB of data. My first thought was that this was caused by the lack of storage space that I knew was going to happen (my bad, should have done something sooner). My phone started to slow down up until a point that one day, when I tried using the camera to take a photo, the camera crashed and suddenly the Camera Roll folder suddenly was reset to 0. It all started with lack of storage space.
